Good morning everyone, how is your weekend going so far? I hope it is nice and relaxing and filled with good food and friends. I thought that I would mix things up a little for brunch this morning, Ben normally makes delicious poached eggs on toast but he’s a little busy with uni work - so I made brioche french toast with homemade caramel sauce. It is probably the sweetest but most delicious way to start your morning, both of us were muttering between mouthfuls that it tastes like a warm doughnut - delish!

Brioche French Toast with Caramel Sauce

1 loaf of slightly stale brioche, sliced thickly
1 1/2 cups milk or pouring cream
6 eggs
1 1/2 teaspoons ground cinnamon
1 tablespoon vanilla essence
Home made Caramel Sauce
In a large mixing bowl combine the milk, eggs, cinnamon and vanilla and whisk until smooth. Pour mixture into a deep baking dish and lay your brioche slices in the egg mixture - leave for around 10 minutes to allow the brioche soak everything up.
In a large fry pan, heat a little oil and gently cook your brioche slices over a medium heat, you don’t want the pan to be hot as it will burn the outside and not cook the middle.
Once cooked on both sides, arrange your french toast on a plate and generously pour over caramel sauce. Enjoy!
