Yesterday was such a gloomy autumn day, so I thought that I would make a little comfort food. I have always had a soft spot for scalloped potatoes but hadn’t made them as Ben isn’t really a fan of cream and cheese {I know right!} I had no idea until a few weeks ago when he ordered it as a side dish at my birthday dinner. I was blown away that he likes this dish, which is great as its so easy and can be made with everyday ingredients but most of all it is so delicious!

Scalloped Potatoes 
This is such a versatile recipe, where you can easily make more or less. Plus add any extra flavor you like from chives, bacon, pancetta, sun dried tomatoes, garlic the list is endless.
4 medium potatoes, peeled and thinly sliced
1 small onion, finely diced {click here to find out my tip for cutting onions!}
1 cup grated cheese
salt and pepper to taste
1 cup milk
Preheat oven to 180°C Place a layer of potatoes in a 20cm baking dish. Sprinkle with some onion, cheese and salt and pepper to taste. Repeat until all the ingredients are used, ending with a layer of cheese. Pour milk over potato mixture. Cover with tinfoil and cook for around 30 - 40min. Remove tinfoil and continue cooking for another 10-15 min or until potatoes are cooked.
