Ours was full of baking, catching up with wonderful friends and I was asked to be a bridesmaid at two of our most incredible friends wedding this winter - by far the most exciting thing ever! You might remember a while ago that I received the most gorgeous bake set from LET LIV, I’ve been trying to think of the perfect thing to bake in it to show off just how gorgeous it is. So this is where my ‘make it up as I go’ recipe came from and it turned out perfectly! If you feel like doing a little baking this week, you must try this recipe, it’s so perfect to share over a cup of tea with gorgeous company! x

White Chocolate & Raspberry Slice

180g white eating chocolate, chopped
350g unsalted butter, chopped
2 cups sugar
1½ cups milk
2 cups plain flour
2/3 cup self-raising flour
1 teaspoon vanilla extract
3 eggs
1 1/2 cups of raspberries - either fresh or frozen
5 tablespoons of vanilla essence
Preheat oven to 160°C. Lightly butter a medium to large baking dish. In a medium sauce pan, combine the chocolate, butter, sugar, vanilla extract and milk, stir over low heat until smooth - allow to cool slightly. In a large mixing bowl combine both flours and whisk to combine, pour in the chocolate mixture and mix on a low speed to combine - then add the eggs one at a time until well combined and the batter is nice and smooth.
In a small saucepan combine the raspberries and vanilla essence and stir over a low heat for about 5 minutes, just enough until it starts to turn into a sauce. You don’t want to completely melt all of the raspberries, you want a nice mix of sauce and whole raspberries.
Pour the raspberry mix into the base of the baking dish and allow to cool. Then pour the white chocolate cake batter on top of the raspberry mix - don’t worry if the sauce starts to rise to the top around the sides, it will make for a nice chewy raspberry edge.
Bake for around 45 minutes at 160°C, or until a skewer inserted comes out slightly clean. Allow to cool before cutting into squares and enjoying with a delicious cup of tea. x
