I hope everyone is having a lovely day so far, at the start of the week I got a shiny new kitchen appliance  - the very cute yet incredibly powerful KitchenAid Artisan Food Chopper! I’ve been running around all day so wanted to make a really quick yet tasty lunch, and of course take my lovely new food chopper for a little spin. I whipped up the most delicious breaded sundried tomato pesto pasta - it’s a fantastic recipe as you can of course make as much or as little of it as you like. I can’t wait to make more delicious pestos, sauces and tasty treats with the food chopper, all of which I will share - I’d love to hear of any recipe suggestions. x

Breaded Sundried Tomato Pesto Pasta

Angel hair pasta
rock salt
1 clove of garlic
Small handful of pinenuts
Handful of sundried tomatoes
Slice of wholemeal bead, roughly torn
50g parmesan cheese, and a little more for grating atop your pasta
Small dash of olive oil
Bring a large pot of salted water to boil and cook your pasta until just done - drain and set aside. Place the garlic, pinenuts, sundried tomatoes, bread and parmesan cheese into the food chopper and pulse until combined and it resembles rough pesto. Add the olive oil to a fry pan and bring to a medium heat before adding the pesto and lightly frying until fragrant. Add the cooked pasta to the pesto and toss to combine, sprinkle with parmesan cheese and enjoy! x
