The great thing about this recipe is, it can be made gluten free, sugar free, vegan, dairy free or just regular.
Most of the ingredients can be changed to suit your dietary requirements, which means its super easy if you have someone over for a breakfast date that might be intolerant to something.Some quick changes can be the egg to a flax or chia egg, the milk for a non dairy sub or simply changing the flours to plain and buckwheat.
Recipe
In a large mixing bowl combine your two flours and baking powder, make a well in the centre.
Whisk together the milk, egg and sugar and gradually add it into the flour mixture.
Put cinnamon and salt in and whisk it all until combine and no lumps.
Pre heat your frying pan and add some butter to stop the pancakes from sticking.
Poor 1/4 cup of the mix into the pan and cook for roughly 2 minutes on each side or until bubbles start to appear.
For the apples.
Place the sugar and water into a large pot, turn on the heat to medium and wait for the sugar to dissolve.
Best way to test this is by placing the water/ sugar mix into your fingers and rubbing them together you will be able to feel the sugar if it has not dissolved yet.
Once sugar is completely dissolved, put in the diced apples and cinnamon stick in.
Turn the heat down to a simmering heat (low) place some baking paper on top almost like a lid right over the top of the apple and water mix.
Simmer until the apples become tender, allow to cool slightly and place on top of your pancakes.
You can pre make the poached apples and warm them up again in the microwave.
