Happy Monday everyone, I hope you all had a glorious weekend. Is anyone else enjoying that the days are a little cooler? I love this crisp weather, it’s the perfect time to spend an afternoon potting in the kitchen making delicious bite size cookies. These teeny tiny bite size cookies are so good, take no time to make and are perfect when served with a cup of tea, or crushed over vanilla ice cream. x
Recipe
Preheat oven to 160°C and line as many baking trays as you own with baking paper.
In a large mixing bowl, cream the butter, brown sugar, beaten egg and molasses until light and fluffy. Sift together the plain flour, salt, baking soda, ground cloves, cinnamon and ginger and then gradually spoon into the creamed butter and sugar mix until smooth.
Drop 1/8 of a teaspoon of dough 1 inch apart onto the prepared baking trays and bake for 5-6 min or until the edges are crispy. Allow to cool on the tray slightly before transferring onto a wire rack to cool. Depending on the size of cookie you make, you can easily make over 50 bite size treats. x
