A few years ago while we were living in England we celebrated Shrove Tuesday, or Pancake Day, I’d never heard of this magical day before and have been quietly celebrating it ever since - it’s just such a good idea! So in honour of the most delicious ‘holiday’ I thought I would whip up a batch of wonderfully simply French Crepes, and of course top these paper thin treats with a little Nutella and freeze dried strawberries! Recipe
Sift flour, baking powder and sugar into a bowl. Whisk milk, vanilla and eggs together in a jug. Melt butter and add to milk mixture, then add to dry ingredients. Whisk until well combined.
Heat a crepe pan or medium non-stick frying pan on medium heat. Spray very lightly with cooking spray. Pour 2 tablespoons batter into pan, swirl the pancake mix around to cover base. Cook for 2 to 3 minutes or until light golden. Turn over and cook for 1 minute. Stack the pancakes high on a plate and cover to keep warm - repeat with remaining batter.
To serve, stack as many crepes as you would like onto a cute plate. Gently (10 seconds at a time) heat the Nutella in the microwave until it drips from the end of a spoon - drizzle on top of your crepe stack, decorate with freeze dried strawberries and serve immediately and enjoy with a delicious cup of tea or coffee. x
