A perfect coffee really is such a lovely way to start any day - but now that summer is starting to settle in, the call for iced coffees is starting to shine a little more. It’s been so humid the past few days in Auckland, so in between an afternoon of online meetings I thought I’d whip up a quick batch of delicious Ginger Thins to serve alongside a refreshing Iced Coffee for a quick afternoon treat. I’m really enjoying the delicious limited edition Festive range by Nespresso at the moment - I used their Ciocco Ginger coffee in this recipe and it really makes for a lovely take on a classic Iced Coffee. Recipe
makes two servings
Combine all of the above ingredients in a blender. Then pour into a glass filled with ice, top with a dollop of whipped cream and shaved chocolate. Serve alongside a freshly baked batch of Ginger Thins for a delicious summer treat. Enjoy. x
