My Mum’s lasagna is incredible, there is honestly nothing better than pottering in the kitchen with her helping make such a simple and oh so delicious meal that everyone loves. Mum’s Lasagna
This is such a simple meal to make and something that can feed a lot of hungry mouths that will always ask for seconds!

Mince sauce

1kg beef or lamb mince
2 x tins pasta sauce (traditional tomato)
2 tablespoons tomato paste
1 tablespoon sugar
salt/pepper, to taste
Handful fresh basil, chopped
Fresh Spinach chopped
Packet lasagna sheets (dried)
Mozzarella cheese-grated

Bechamel Sauce

5 tablespoons butter
4 tablespoons plain flour
4 cups milk
salt & pepper

Pre-heat oven 180°C Brown mince in a fry pan until cooked, place mince in sieve and wash under hot water to remove any excess fat. Return mince to pan and add pasta sauce, tomato paste, sugar, salt & pepper to taste and fresh basil. Mix well and allow to simmer while preparing the Bechamel sauce.
Melt butter in microwave on high for about 1 min, add flour and mix into a paste.  Add 2 cups of milk and combine, heat in microwave for 2mins at high. Stir to combine, add rest of milk and salt and pepper reduce to 1 min on high in microwave-stir, repeat until sauce thickens and is smooth. Place in lasagna dish in layers, mince, spinach, lasagna sheets to cover, layer of sauce.  Repeat until all has been used.  Finish with layer of Bechamel sauce and top with grated mozzarella cheese. Place in oven and cook for approx 20-30 minutes.  Allow stand for 10 minutes before serving.
